(a) Raw READY-TO-EAT FOOD including other raw animal FOOD such as FISH for sushi or MOLLUSCAN SHELLFISH, or other raw READY-TO-EAT FOOD such as fruits and vegetables, and
(b) Cooked READY-TO-EAT FOOD;
(c) Frozen, commercially processed and packaged raw animal FOOD may be stored or displayed with or above frozen, commercially processed and packaged, ready-to eat food. THE MANAGER AND PERSON-IN CHARGE, JAMIE SCRITCHLOW, WAS IN FORMED OF THE REPORTS OF PEOPLE BECOMING ILL AFTER EATING FOOD FROM BEEF O'BRADY'S AND THE POTENTIAL OF A FOOD-BORNE OUTBREAK.
AN INVESTIGATION FOCUSED ON EMPLOYEE ILLNESS REPORTING; IN ADDITION TO FOOD HANDLING AND SANITATION, WHICH CENTERED AROUND THE FOOD ITEMS LINKING CASES TOGETHER. THIS FACILITY DOES HAVE AN ESTABLISHED EMPLOYEE ILLNESS REPORTING GUIDELINE. HOWEVER, NO EMPLOYEE ILLNESS LOGS ARE MAINTAINED. AFTER DISCUSSION WITH MS. SCRITCHLOW AND KITCHEN STAFF, EMPLOYEES HAVE NOT BEEN WORKING WHILE EXPERIENCING REPORTABLE SYMPTOMS. THE KITCHEN STAFF WERE QUESTIONED ON THE PROCESS OF STORING, COOKING, AND SERVING FOOD. ALSO, BASIC FOOD SAFETY PROCESSES WERE REVIEWED. OVERVIEW OF FOODBORNE ILLNESS INVESTIGATION: (1) EMPLOYEES HAVE CALLED OFF OF WORK BUT NONE OF THE EMPLOYEES REPORTED SYMPTOMS OR CONDITIONS DESCRIBED WITHIN THE FDA'S EMPLOYEE ILLNESS REPORTING AGREEMENT (FORM 1-B). (2) THE MANAGER HAS DEMONSTRATED SATISFACTORY KNOWLEDGE OF FOOD SAFETY AND ILLNESS PREVENTION. (3) EMPLOYEES HAVE DEMONSTRATED COMPETENT FOOD HANDLING PRACTICES AND DISPLAYED PROPER HYGIENIC PRACTICES. (4) ONE PRIORITY VIOLATION WAS OBSERVED (#15). HOWEVER, WRAPS AND OTHER READY-TO-EAT FOOD ITEMS ARE ASSEMBLED AT THE "WINDOW STATION" REACH-IN COOLER/PREP-STATION--NO RAW MEAT IS HANDLED AT THIS STATION. (5) NO FOOD ITEMS RELATED TO THE FBI COMPLAINT REMAIN ON THE PREMISES. FOOD ITEMS ARE ROTATED EVERY 2-3 DAYS. FOODBORNE-ILLNESS INVESTIGATION RESULTS: COULD NOT CONCLUSIVELY DETERMINE THE CAUSE OF THE COMPLAINANT'S SYMPTOMS |
